Method

Preparation

  1. 1

    Prepare the Onion Mixture

In a large bowl, combine the thinly sliced onions, chopped coriander, cumin seeds, turmeric powder, chili powder, salt, and baking powder. Mix well and let it sit for about 10-15 minutes to allow the onions to release their moisture.

  2. 2

    Make the Batter

Add the gram flour and rice flour to the onion mixture. Gradually add water, mixing until you achieve a thick batter that coats the onions but is not too runny.

  3. 3

    Heat the Oil

In a deep frying pan, heat the oil over medium heat until hot. You can test if the oil is ready by dropping a small amount of batter into it; it should sizzle and rise to the surface.

  4. 4

    Fry the Fritters

Using a spoon or your hands, carefully drop spoonfuls of the batter-coated onion mixture into the hot oil. Fry in batches to avoid overcrowding. Cook until golden brown and crispy, about 4-5 minutes, turning occasionally.

  5. 5

    Drain and Serve

Once fried, remove the fritters with a slotted spoon and drain on paper towels. Serve hot with chutney or sauce of your choice.
