Preparing the Puris

Make the Dough
In a mixing bowl, combine semolina, all-purpose flour, baking soda, and salt. Gradually add water and knead to form a smooth dough. Cover and let it rest for 30 minutes.

Fry the Puris
After resting, knead the dough lightly and divide it into small balls. Roll each ball into a thin circle. Heat oil in a pan and deep fry the puris until they are golden and crispy. Drain on paper towels.
Preparing the Filling

Mix the Filling
In a bowl, combine mashed potatoes, cooked chickpeas, chopped onions, green chilies, coriander leaves, chaat masala, and salt. Mix well.
Assembling the Dahi Puri

Fill the Puris
Take a puri and make a small hole on top. Fill it with the potato-chickpea mixture.

Add Yogurt and Chutneys
Top each filled puri with a generous amount of yogurt, followed by chili powder, chaat masala, sweet tamarind chutney, and green chutney.
