    Marinate the Chicken

    In a bowl, combine the yogurt, lemon juice, minced garlic, grated ginger, garam masala, ground cumin, ground coriander, turmeric powder, cayenne pepper, and salt. Add the chicken thighs and coat well. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best results.

    Cook the Chicken

    In a large pan or skillet, heat the oil over medium heat. Add the chopped onion and sauté until softened and golden brown, about 5-7 minutes. Add the marinated chicken (reserve the marinade) and cook until browned on all sides, about 8-10 minutes.

    Prepare the Sauce

    Add the reserved marinade and coconut milk to the pan with the chicken. Stir well to combine, bring to a simmer, and reduce the heat to low. Cook for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened. Stir occasionally.

    Garnish and Serve

    Once cooked, taste and adjust seasoning with more salt or cayenne if desired. Garnish with chopped cilantro. Serve hot with gluten-free rice or naan.
