Marinade and Chicken

Method

Preparation and Cooking

  1. 1

    Marinate the Chicken

In a large bowl, combine the plain yogurt, tandoori masala, ginger paste, garlic paste, lemon juice, and salt. Mix well. Cut the boneless chicken thighs into bite-sized pieces and add them to the marinade. Ensure all pieces are well-coated. Cover the bowl and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

  2. 2

    Prepare Skewers

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during cooking. If you're using metal skewers, they are ready to use.

  3. 3

    Skewer the Chicken

Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

  4. 4

    Cook the Chicken

Preheat the tandoor or grill to a high temperature. Place the skewers in the tandoor or on the grill. Cook for about 15-20 minutes, turning occasionally, until the chicken is fully cooked and has a nice char. The internal temperature should reach 75°C (165°F).

  5. 5

    Serve

Remove the chicken tikka from the skewers and serve hot with mint chutney and lemon wedges.
