Marinade

For Grilling

Method

Preparation

  1. 1

    Marinate the Chicken

In a large bowl, combine plain yogurt, lemon juice, minced garlic, grated ginger, ground cumin, ground coriander, turmeric powder, cayenne pepper, salt, and black pepper. Mix well to form a marinade. Cut the chicken breast into bite-sized pieces and add to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 1 hour, preferably overnight for best flavor.

Grilling

  1. 2

    Grill the Chicken

Preheat your grill to medium-high heat. Once hot, drizzle olive oil over the grill grates to prevent sticking. Remove the chicken pieces from the marinade, shaking off excess. Thread the chicken onto skewers (if using wooden skewers, soak them in water for 30 minutes prior). Grill the chicken for about 10-12 minutes, turning occasionally, until fully cooked and slightly charred. Remove from the grill and let rest for a few minutes.

Serving

  1. 3

    Garnish and Serve

Garnish the grilled chicken tikka with fresh cilantro. Serve hot with your choice of gluten-free sides like rice or salad.
