    Roasting Coconut

    In a dry skillet over medium heat, add the grated coconut and roast until golden brown, stirring frequently. Remove from heat and set aside.

    Cooking the Chicken

    In a large pot, heat coconut oil over medium heat. Add black mustard seeds and let them pop. Once they start popping, add the chopped onions and sauté until golden brown.

    Adding Aromatics

    Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

    Spicing it Up

    Add turmeric, coriander, cumin, and red chili powders. Mix well and cook for a couple of minutes.

    Add the chicken cubes and salt. Cook until the chicken is browned on all sides.

    Pour in the pureed tomato and mix well. Cover and let it simmer for about 15-20 minutes, stirring occasionally, until the chicken is fully cooked.

    Stir in the roasted coconut and cook for another 5 minutes to combine the flavors.
