Pakora Preparation

Prepare the Pakora Batter
In a large mixing bowl, combine chickpea flour, rice flour, turmeric powder, red chili powder, garam masala, cumin seeds, and salt. Gradually add water to form a thick batter.

Coat the Cauliflower
Dip each cauliflower floret into the batter, ensuring it's well-coated.

Fry the Pakoras
Heat oil in a deep pan over medium heat. Fry the coated cauliflower in batches until golden brown and crispy. Remove and drain on paper towels.
Chaat Assembly

Assemble the Chaat
On a serving plate, place a layer of spiced chickpeas, followed by the fried cauliflower pakoras.

Add Toppings
Drizzle whisked yogurt over the pakoras, sprinkle chaat masala, and add mint and tamarind chutneys to taste.

Garnish
Top with chopped cilantro and pomegranate seeds. Serve immediately.
