    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Peel and cut the potatoes into cubes. Boil them in salted water until just tender, about 10 minutes, then drain and set aside.

    Cook the Spices

    In a large oven-safe skillet, heat the cooking oil over medium heat. Add the black mustard seeds and sauté until they start to pop. Add the chopped onion and cook until translucent, about 5 minutes.

    Add Tomato and Spices

    Stir in the chopped tomatoes and cook until they soften. Add turmeric, cumin, coriander, chili powder, and salt. Cook for another 3-4 minutes until the mixture is fragrant.

    Combine Potatoes and Bake

    Gently fold in the boiled potatoes with the spice mixture in the skillet. Spread evenly and transfer the skillet to the preheated oven. Bake for 20-25 minutes until the top is slightly crispy.

    Remove from the oven, garnish with fresh cilantro, and serve hot.
