Preparation of Eggplants

    Marinate the Eggplants

    Wash and slit the baby eggplants in a cross pattern without cutting them all the way through. In a bowl, combine turmeric powder, salt, chili powder, and rice flour. Rub this mixture onto the eggplants, ensuring they are well coated. Let them marinate for about 15 minutes.

    Deep Fry the Eggplants

    Heat oil in a deep frying pan over medium heat. Once hot, gently add the marinated eggplants and fry until they are golden brown and cooked through. Remove and drain on paper towels.

Coconut Curry Preparation

    Make the Coconut Curry

    In a pan, heat a little oil and add mustard seeds. Once they splutter, add cumin seeds and curry leaves. Sauté for a few seconds, then add the chopped onions and green chilies. Sauté until the onions turn translucent.

    Combine Ingredients for Curry

    Add ginger-garlic paste and sauté for a minute. Then, add grated coconut, coriander powder, garam masala, tamarind paste, and water. Stir well and let it simmer for about 5-7 minutes.

    Finish the Dish

    Add the fried baby eggplants to the coconut curry, mix gently, and let it cook for another 5 minutes. Adjust salt to taste.
