Method

Preparing the Puris

    Make the Dough

    In a mixing bowl, combine semolina, all-purpose flour, and salt. Gradually add water to form a stiff dough. Cover with a damp cloth and let it rest for 20 minutes.

    Fry the Puris

    Heat oil in a deep pan. Divide the dough into small balls and roll each ball into thin circles. Fry in hot oil until puffed and golden brown. Drain on paper towels and let cool.

Preparing the Filling

    Mix the Filling

    In a bowl, mix the mashed potatoes, chopped onions, chopped tomatoes, coriander leaves, chaat masala, and salt. Stir well to combine.

Preparing Beet Yogurt

    Blend the Yogurt

    In a bowl, mix the plain yogurt, beetroot puree, and salt until smooth and well combined.

Assembling the Dahi Puchka

    Fill the Puris

    Take a puri and make a small hole on top. Fill it with the potato mixture, then drizzle beet yogurt, tamarind chutney, and mint chutney on top. Serve immediately.
