Cooking Instructions

  1. 1

    Preparation of Eggplant

Wash the baby eggplants and make a few slits on each, being careful not to cut them completely in half.

  2. 2

    Sautéing the Base

In a pan, heat the oil over medium heat. Add mustard seeds and let them splutter. Then add the chopped onions and sauté until they turn golden brown.

  3. 3

    Adding Spices

Add the turmeric, coriander powder, and red chili powder to the onions. Stir well for about 1 minute to release the flavors.

  4. 4

    Cooking Tomatoes

Add the chopped tomatoes and cook until they soften and blend with the spices.

  5. 5

    Incorporating Eggplants

Gently add the prepared baby eggplants to the pan. Stir to coat them with the onion-tomato mixture.

  6. 6

    Adding Coconut and Curry Leaves

Sprinkle in the grated coconut and curry leaves. Add salt to taste. Cover and cook on low heat for about 15-20 minutes, or until the eggplants are tender.

  7. 7

    Serving

Once cooked, remove from heat and serve hot with rice or flatbreads.
