    Prepare Potatoes

    Preheat the oven to 400°F (200°C). Peel and chop the potatoes into bite-sized pieces. Toss them with a little oil and salt, then spread them on a baking sheet and bake for about 25-30 minutes or until golden and crispy.

    Make the Curry Base

    In a large pan, heat 2 tablespoons of oil over medium heat. Add cumin seeds and let them sizzle for a few seconds. Add chopped onions and sauté until they are translucent.

    Add Spices

    Stir in minced garlic, grated ginger, turmeric powder, coriander powder, and garam masala. Cook for another 2-3 minutes until fragrant.

    Add Tomatoes and Spinach

    Add chopped tomatoes and cook until they break down. Then add spinach and mix well. Cook until the spinach wilts and the mixture thickens, about 5-7 minutes.

    Combine Potatoes with Spinach Curry

    Once the potatoes are baked, fold them into the spinach mixture. Adjust salt to taste and cook for an additional 2-3 minutes to meld the flavors.
