Make the Pie Dough
In a large bowl, whisk together the flour, sugar, and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, form into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
