Prepare the Tomatoes
Slice the green tomatoes into 1/2 inch thick slices. Sprinkle with salt and let them sit for about 10 minutes to draw out moisture.

Set Up Breading Station
In one shallow bowl, combine the flour, salt, black pepper, and cayenne pepper. In another bowl, whisk together the buttermilk and egg. In a third bowl, place the cornmeal.

Bread the Tomatoes
Dredge each tomato slice in the flour mixture, then dip into the buttermilk mixture, and finally coat with cornmeal, pressing gently to adhere.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

Fry the Tomatoes
Carefully add the breaded tomato slices to the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes on each side or until golden brown.

Drain and Serve
Remove the fried green tomatoes and place them on a paper towel-lined plate to drain excess oil. Serve hot with zesty remoulade on the side.
