Prepare the Ice Cream

    Scoop and Freeze

    Scoop the ice cream of your choice into small balls (about 1 tablespoon each) and place them on a tray lined with parchment paper. Freeze the ice cream balls for at least 1 hour or until solid.

Make the Mochi Dough

    Combine Ingredients

    In a large microwave-safe bowl, mix together the sweet rice flour, sugar, and water until smooth.

    Microwave the Mixture

    Cover the bowl with plastic wrap and microwave on high for 1 minute. Remove and stir. Repeat this process for about 2-3 minutes until the mixture becomes sticky and translucent.

    Add Cornstarch

    Once cooked, sprinkle cornstarch on a clean surface and transfer the mochi dough onto it. Dust the top of the dough with more cornstarch to prevent sticking.

Assemble the Mochi Ice Cream

    Shape the Mochi

    Divide the mochi dough into small pieces (about 2 tablespoons each). Flatten each piece into a round disk.

    Fill with Ice Cream

    Take a frozen ice cream ball and place it in the center of the mochi disk. Carefully fold the mochi over the ice cream, pinching to seal it completely. Roll it gently in your hands to shape it into a ball.

    Repeat

    Repeat this process with the remaining mochi dough and ice cream balls. Place the finished mochi ice cream on a tray and freeze for at least another hour before serving.
