Preparation & Assembly

    Prepare the Brisket

    Rub the brisket with your favorite spices and smoke it at 225°F (107°C) for about 12 hours until tender.

    Slice the Brisket

    Once the brisket is cooked, let it rest for at least 30 minutes before slicing it thinly against the grain.

    Prepare the Sandwich

    Spread a generous amount of garlic aioli on the bottom half of each brioche bun. Layer the sliced brisket on top.

    Add Toppings

    Drizzle Thai chili BBQ sauce over the brisket, then add house pickles and pickled red onion.

    Complete the Sandwich

    Place the top half of the brioche bun on the sandwich and press down gently.

    Serve

    Serve the smoked brisket sandwiches alongside Zapp's Potato Chips for a complete meal.
