Method

Preparation of Chicken

    Marinate Chicken

    In a bowl, mix buttermilk, salt, black pepper, paprika, and garlic powder. Add the chicken breasts and marinate for at least 1 hour or overnight in the refrigerator.

    Breading

    In a shallow dish, place the flour. Beat the eggs in another bowl. Dredge the marinated chicken in flour, dip it in the beaten eggs, and then coat again with flour.

Frying

    Heat Oil

    In a large frying pan, heat vegetable oil over medium-high heat until shimmering.

    Fry Chicken

    Carefully place the breaded chicken in the hot oil and fry for about 5-7 minutes on each side, or until golden brown and cooked through. Drain on paper towels.

Garlic Aioli and Sauce

    Prepare Garlic Aioli

    In a bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix well and set aside.

    Prepare Smoked Tomato-Thai Chili Sauce

    In a blender, combine smoked tomatoes, Thai chili sauce, honey, and lime juice. Blend until smooth.

Assembly

    Assemble Sandwich

    On the bottom half of the brioche bun, spread garlic aioli. Add fried chicken, house pickles, sliced tomato, and mixed greens. Drizzle with smoked tomato-Thai chili sauce and top with the other half of the bun.
