Method

Preparing the potatoes

    Boil the Potatoes

    In a large pot, bring salted water to a boil. Add the red-skinned potatoes and cook until tender, about 15-20 minutes. Drain and let cool slightly.

    Smash the Potatoes

    Preheat the oven to 425°F (220°C). Place the boiled potatoes on a baking sheet. Using a fork or potato masher, gently smash each potato until flattened but not completely broken apart.

    Season and Bake

    Drizzle the smashed potatoes with olive oil and sprinkle with salt and black pepper. Bake in the preheated oven for 20-25 minutes, until golden and crispy.

Preparing the toasted garlic

    Toast the Garlic

    In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté until golden brown and fragrant, about 2-3 minutes. Remove from heat and set aside.

Making the sauce

    Combine Ingredients

    In a small bowl, mix together the smoked tomatoes, Thai chili paste, and lime juice until well combined.

Serving

    Plate the Dish

    Serve the crispy smashed potatoes topped with toasted garlic, a dollop of crème fraiche garnished with chives, and a generous drizzle of the smoked tomato-Thai chili sauce.
