Sauté the Vegetables
In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté until softened, about 5-7 minutes. Add the minced garlic and cook for another minute.

Brown the Meats
Add the diced beef and sliced Andouille sausage to the pot. Cook until the meat is browned on all sides.

Combine and Simmer
Add the soaked red beans, bay leaves, Cajun seasoning, salt, black pepper, and water or broth to the pot. Stir well, bring to a boil, then reduce the heat to low. Cover and let it simmer for about 2-3 hours, stirring occasionally, until the beans are tender.

Cook the Rice
In a separate pot, cook the rice according to package instructions using water or broth for added flavor.

Serve
Once the beans are cooked, remove the bay leaves. Serve the red beans over the steamed rice with garlic bread on the side.
