    Prepare the Base

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté for about 5 minutes until the vegetables are softened.

    Add Garlic and Sausage

    Stir in the minced garlic and sliced andouille sausage. Cook for another 2-3 minutes until the sausage is browned.

    Incorporate Chicken and Spices

    Add the shredded roasted chicken, stewed tomatoes (with juices), Cajun seasoning, bay leaves, salt, and black pepper. Stir well to combine.

    Add Rice and Broth

    Pour in the rice and chicken broth. Bring the mixture to a boil, then reduce heat to low. Cover the pot and let it simmer for about 20-25 minutes or until the rice is cooked and has absorbed the liquid.

    Serve

    Once cooked, remove the bay leaves. Fluff the jambalaya with a fork and serve hot with garlic bread on the side.
