    Make the Roux

    In a large pot, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly until the mixture turns a dark brown color, similar to chocolate (this may take 20-30 minutes).

    Add Vegetables

    Once the roux is ready, add the diced onion, green bell pepper, celery, and minced garlic. Cook for about 5 minutes until the vegetables are tender.

    Add Meats

    Stir in the chicken, andouille sausage, and beef. Cook for another 5-7 minutes until the meats are browned.

    Add Liquids and Seasonings

    Pour in the chicken broth and add the canned diced tomatoes, bay leaves, cayenne pepper, salt, and black pepper. Stir well.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low and let it simmer for at least 1 hour, stirring occasionally.

    Add Okra

    Add the sliced okra and continue to simmer for an additional 15-20 minutes.

    Serve

    Remove bay leaves, taste, and adjust seasoning if necessary. Serve hot with garlic bread.
