Fried Green Tomatoes Preparation

    Prepare the Tomatoes

    Slice the green tomatoes into 1/4 inch thick slices. Sprinkle them with salt and let them sit for about 15 minutes to draw out moisture.

    Set Up Breading Station

    In one bowl, place the flour. In a second bowl, whisk together the eggs and buttermilk. In a third bowl, combine cornmeal, salt, black pepper, and cayenne pepper.

    Bread the Tomatoes

    Dredge each tomato slice in flour, then dip it in the egg mixture, and finally coat it with the cornmeal mixture. Set aside on a plate.

    Fry the Tomatoes

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded tomato slices in batches. Fry until golden brown, about 3-4 minutes per side. Drain on paper towels.

    Assemble the Dish

    On a plate, place a bed of mixed greens. Top with fried green tomatoes, pickled onions, and succotash. Drizzle with remoulade and sprinkle with crumbled Bulgarian feta.
