Prepare the Banana Filling
In a skillet, melt butter over medium heat. Add brown sugar and stir until dissolved. Add sliced bananas, cinnamon, and vanilla extract. Cook for 2-3 minutes until bananas are soft and caramelized. Remove from heat and let cool slightly.

Assemble the Empanadas
Take a piece of empanada dough and place about a tablespoon of the banana filling in the center. Fold the dough over to form a half-moon shape and press the edges to seal. Repeat with remaining dough and filling.

In a deep skillet, heat oil over medium-high heat. Fry the empanadas in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
