    Prepare Potatoes

    Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly.

    Smashed Fried Potatoes

    Once cooled, gently smash each potato with the back of a fork. Heat olive oil in a skillet over medium heat. Add the smashed potatoes and fry until crispy and golden brown, about 4-5 minutes on each side. Season with salt and pepper.

    Prepare Asparagus

    While the potatoes are cooking, heat a grill or a grill pan over medium-high heat. Toss the asparagus with olive oil, salt, and pepper. Grill for about 3-4 minutes until tender and slightly charred.

    Cook the Fish

    Season the fish fillets with olive oil, blackening seasoning, salt, and pepper. Heat a skillet over medium-high heat and sear the fish for about 3-4 minutes on each side until cooked through and flaky.

    Make Brown Butter Meuniere Sauce

    In a small saucepan, melt the butter over medium heat. Add minced garlic and cook until fragrant. Continue to cook the butter until it turns golden brown, about 5 minutes. Remove from heat and stir in lemon juice.

    On each plate, arrange the smashed fried potatoes, grilled asparagus, and seared fish. Drizzle the brown butter meuniere sauce over the fish and serve immediately.
