Make the Olive Salad
In a medium bowl, combine green olives, black olives, celery, carrots, and garlic. In a small bowl, whisk together olive oil, red wine vinegar, oregano, and black pepper. Pour the dressing over the olive mixture and mix well. Let it sit for at least 30 minutes to allow the flavors to meld.

Assemble the Muffuletta
Slice the Gambino's bread horizontally. Layer the mortadella, Genoa salami, soppressata, spicy capicola, smoked ham, provolone cheese, and olive salad on the bottom half of the bread.

Toast the Sandwich
Top with the other half of the bread and press down gently. Wrap the sandwich in foil and toast it in a preheated oven at 350°F (175°C) for about 15-20 minutes, or until heated through and the cheese is melted.

Serve
Remove from the oven, unwrap, and cut into individual servings. Serve with Zapp's Potato Chips on the side.
