Prepare the Brisket
Season the brisket with salt, black pepper, and smoked paprika. In a large skillet, heat olive oil over medium heat. Sear the brisket on all sides until browned. Transfer to a slow cooker and add beef broth. Cook on low for 8 hours or until tender.

Make the Grits
In a saucepan, bring water to a boil. Slowly whisk in the grits and reduce heat to low. Cook for about 20 minutes, stirring frequently until the grits are thick and creamy. Stir in minced garlic, cheddar, Monterey Jack, and Parmesan cheeses until melted and smooth. Season with salt and pepper to taste.

Fry the Eggs
In a non-stick skillet, fry the eggs to your preference (sunny-side up or over easy) using a little olive oil.

Assemble the Dish
To serve, place a generous scoop of cheesy grits on a plate, top with shredded smoked brisket, a fried egg, and garnish with chopped scallions. Drizzle with brisket jus from the slow cooker.
