Mix Ingredients
In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture, egg, and melted butter. Mix until a dough forms.

Knead the Dough
Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth and elastic. Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Beignets
Once the dough has risen, punch it down and roll it out to about ½ inch thick. Cut into squares or rectangles, about 2-3 inches wide.

Heat the Oil
In a deep pan, heat the vegetable oil to 350°F (175°C).

Fry the Beignets
Fry the dough squares in batches until golden brown, about 2-3 minutes per side. Use a slotted spoon to remove them and drain on paper towels.

Dust the beignets generously with powdered sugar and serve warm with a side of chocolate or rum sauce.
