Prepare the Dough

In a bowl, dissolve the yeast and brown sugar in warm water. Let it sit for about 5 minutes until foamy. In a large mixing bowl, combine the flour and salt. Stir in the yeast mixture until a dough forms.

Knead the Dough

Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape the Pretzels

Preheat your oven to 450°F (232°C). Once the dough has risen, punch it down and divide it into 2 equal pieces. Roll each piece into a long rope, then twist it into a pretzel shape.

Boil the Pretzels

In a large pot, bring 10 cups of water and baking soda to a boil. Carefully add each pretzel to the boiling water for about 30 seconds, then remove with a slotted spoon and place on a baking sheet lined with parchment paper.

Bake the Pretzels

Brush the pretzels with the egg wash (beaten egg) and sprinkle with coarse salt. Bake in the preheated oven for 12-15 minutes until golden brown.
