1. Prepare the Bison Patties
In a mixing bowl, combine ground bison, salt, and black pepper. Form into two equal-sized patties.
2. Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove and place on paper towels to drain.
3. Grill the Patties
In the same skillet or on a grill, cook the bison patties for about 4-5 minutes per side for medium rare, or until desired doneness is reached.
