Prepare the Cornbread
Preheat your oven to 400°F (200°C). In a mixing bowl, combine cornmeal, all-purpose flour, baking powder, sugar, and salt. In another bowl, whisk together milk, 1 egg, and melted butter. Combine wet and dry ingredients until just mixed. Pour the batter into a greased baking dish and bake for 20-25 minutes or until golden brown. Let it cool slightly before serving.

Poach the Eggs
In a large pot, bring water to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the water. Poach for about 3-4 minutes or until the whites are set but the yolks are still runny. Remove with a slotted spoon and set aside.

Assemble the Dish
Slice the cornbread into squares and place on serving plates. Top each piece with a generous amount of pulled pork, followed by a poached egg. Drizzle with hollandaise sauce and BBQ sauce. Garnish with chopped scallions.
