Preparation of Fries

    Cut and Soak Potatoes

    Wash and cut the Russet potatoes into thin fry shapes. Soak them in cold water for at least 30 minutes to remove excess starch.

    Heat Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry Potatoes

    Drain the soaked potatoes and pat them dry. Fry them in batches for about 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.

    Season Fries

    While the fries are still hot, sprinkle with salt and Asian chili spice blend to taste.

Preparation of Scallion Mayo

    Mix Ingredients

    In a bowl, combine mayonnaise, chopped scallions, and lemon juice. Mix well and set aside.

Preparation of Kimchee Ketchup

  1. 6

    Combine Ketchup and Kimchi

    In a small bowl, mix together the ketchup and chopped kimchi until well combined.
