Peel the potatoes and grate them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.

In a mixing bowl, combine the grated potatoes with salt and black pepper. Mix well to ensure the seasoning is evenly distributed.

In a large non-stick skillet, heat the olive oil and butter over medium heat until hot.

Cook the Rösti
Add the grated potato mixture to the skillet, pressing it down firmly to form an even layer. Cook for about 10-15 minutes until the bottom is golden brown.

Flip the Rösti
Carefully flip the rösti using a large plate or spatula. Cook the other side for another 10-15 minutes until golden brown and crispy.

Once both sides are cooked, transfer the rösti to a cutting board, cut into wedges, and serve hot.
