Prepare the Hominy
Rinse the dried hominy under cold water and soak it overnight in a large pot with enough water to cover. Drain and set aside.

Add Tomatoes and Spices
Add the diced tomatoes, vegetable broth, cumin, smoked paprika, salt, and black pepper to the pot. Bring to a boil.

Simmer with Hominy
Add the soaked hominy to the pot. Reduce heat to low and let simmer for about 1 hour, stirring occasionally, until hominy is tender.

Stir in chopped cilantro, scallions, pickled jalapeños, and crumbled goat cheese just before serving.
