    Prepare the Marinade

    In a bowl, combine minced garlic, ground cumin, ground coriander, paprika, turmeric, cinnamon, olive oil, salt, and black pepper. Mix well to form a marinade.

    Marinate the Lamb

    Rub the marinade all over the lamb shoulder and place it in a sealed bag or container. Refrigerate for at least 4 hours or overnight for best flavor.

    Roast the Lamb

    Preheat the oven to 325°F (160°C). Place the marinated lamb in a roasting pan and cover it with foil. Roast for about 2.5 to 3 hours, or until the lamb is tender and pulls apart easily.

    Prepare the Toppings

    While the lamb is roasting, prepare your toppings: dice the tomato, thinly slice the onion, and shred the lettuce.

    Warm the Pita

    About 10 minutes before the lamb is done, warm the pita bread in the oven or on a skillet.

    Assemble the Shawarma

    Once the lamb is cooked, remove it from the oven and let it rest for 10 minutes. Slice the lamb thinly. To serve, take a piece of pita, add sliced lamb, top with tzatziki, diced tomato, onion, and shredded lettuce.
