    Rinse the pinto beans under cold water and remove any debris. Soak the beans in water for at least 6 hours or overnight.

    In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onion is translucent.

    Drain the soaked beans and add them to the pot. Pour in 8 cups of fresh water, add cumin, chili powder, salt, black pepper, and bay leaves. Bring to a boil.
