Prepare the Beans
Rinse the pinto beans under cold water and remove any debris. Soak the beans in water for at least 6 hours or overnight.

Cook the Beans
Drain the soaked beans and add them to the pot. Pour in 8 cups of fresh water, add cumin, chili powder, salt, black pepper, and bay leaves. Bring to a boil.

Simmer
Once boiling, reduce heat to low, cover, and let simmer for 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more water if necessary.

Taste and adjust seasoning as needed. Remove bay leaves before serving.
