    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and let cool slightly.

    Prepare the Egg Yolks

    In a heatproof bowl, whisk together the egg yolks and water until the mixture is thick and pale.

    Combine Ingredients

    Place the bowl with the egg yolk mixture over a pot of simmering water (double boiler method). Make sure the bowl does not touch the water.

    Whisk Constantly

    Whisk constantly until the yolks are thickened and light in color, about 3-5 minutes.

    Add Butter Gradually

    Slowly drizzle in the melted butter while continuing to whisk until the sauce is thick and creamy.

    Season the Sauce

    Add lemon juice, salt, and ground white pepper to taste. Whisk until well combined.

    Serve

    Remove from heat and serve immediately over your favorite dishes such as eggs Benedict or steamed vegetables.
