Prepare the Sweet Potato Hash
Peel and dice the sweet potatoes into small cubes. In a large skillet, heat the olive oil over medium heat. Add the sweet potatoes, salt, and black pepper. Cook for about 15-20 minutes, stirring occasionally, until the sweet potatoes are tender and slightly crispy.

Sauté the Spinach
In a separate pan, add a splash of olive oil over medium heat. Add the fresh spinach and cook for 2-3 minutes until wilted. Season with a pinch of salt and pepper.

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide it into the simmering water. Poach for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon and drain on paper towels.

Assemble the Dish
On a plate, layer the sweet potato hash, followed by the sautéed spinach. Top with the poached eggs. Drizzle the hollandaise sauce over the eggs and finish with a spoonful of harissa relish.
