Biscuit Preparation

Make the Biscuits
Preheat your oven to 425°F (220°C). In a large bowl, mix together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Turn the dough onto a floured surface and knead gently. Roll out to 1-inch thickness and cut out biscuits. Place on a baking sheet and bake for 12-15 minutes until golden.

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide into the simmering water. Cook for 3-4 minutes for soft yolks. Remove with a slotted spoon and set aside.

Make the Hollandaise Sauce
In a heatproof bowl, whisk together 3 egg yolks, 1 tablespoon lemon juice, and a pinch of salt. Place over a pot of simmering water and whisk continuously until thickened, about 3-5 minutes. Gradually add 1/2 cup melted butter while whisking until smooth and creamy.

Assemble the Gorilla Biscuits
Split the biscuits in half. Layer each with crispy ham, fried cheese, and a poached egg. Drizzle with hollandaise sauce and serve immediately.
