    In a large bowl, combine the chicken pieces and buttermilk. Cover and refrigerate for at least 2 hours or overnight for best results.

    In a separate bowl, mix together flour, cornstarch, salt, black pepper, paprika, cayenne pepper, garlic powder, and onion powder.

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Chicken

    Remove the chicken pieces from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, pressing it onto the chicken to form a thick coating.

    Carefully place the coated chicken pieces in the hot oil, ensuring not to overcrowd the pot. Fry in batches for 12-15 minutes until golden brown and cooked through. Use a meat thermometer to ensure an internal temperature of 165°F (75°C).
