Soak Chickpeas
Soak dried chickpeas in water overnight. Drain and rinse before use.

Make Falafel Mixture
In a food processor, combine soaked chickpeas, chopped onion, minced garlic, parsley, cumin, coriander, baking powder, salt, and black pepper. Pulse until a coarse mixture forms, but do not puree.

Shape Falafel
Using your hands, form the mixture into small balls or patties, about the size of a golf ball.

Heat Oil
In a deep frying pan, heat vegetable oil over medium heat until hot.

Fry Falafel
Carefully place falafel balls into the hot oil, frying in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Assemble Pitas
Warm pita breads slightly, then cut them open to form pockets. Fill each with fried falafel, lettuce, pickles, diced tomatoes, diced cucumbers, and drizzle with tahini.
