Preparing the Fries

Cutting the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to create fries.

Frying the Fries
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels, then sprinkle with salt.
Making the Curry Mayo

Combining Ingredients
In a bowl, mix mayonnaise, curry powder, and lemon juice until well combined. Set aside.

On a serving platter, arrange the crispy fries. Drizzle with curry mayo and serve with curry ketchup on the side.
