    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Once done, place them on a paper towel to drain excess grease.

    Prepare Avocado

    Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and season with salt and pepper to taste.

    Scramble the Eggs

    In a bowl, whisk together the eggs with a pinch of salt and pepper. In a non-stick skillet, melt 1 tbs of butter over medium-low heat. Pour the eggs into the skillet and gently stir with a spatula until they are softly scrambled. Remove from heat.

    Make Hollandaise Sauce

    In a heatproof bowl, whisk the egg yolks with lemon juice until thickened. Place the bowl over a pot of simmering water and slowly drizzle in melted butter while whisking continuously until the sauce thickens. Season with salt.

    Toast the Muffins

    Split the English muffins in half and toast them until golden brown. Spread a little butter on each half if desired.

    Assemble the B.A.S.H.

    On each toasted muffin half, layer the mashed avocado, crispy bacon, scrambled eggs, and drizzle with Hollandaise sauce. Top with the other half of the muffin, and serve immediately.
