Prepare the Fries
Peel and cut the russet potatoes into thin fry-shaped pieces. Rinse them under cold water to remove excess starch, then pat dry with paper towels.

Fry the Potatoes
In a large pot, heat the vegetable oil over medium-high heat. Once hot, carefully add the potato fries in batches and fry until golden brown and crispy, about 5-7 minutes per batch.

Season the Fries
Remove the fries from the oil and drain on paper towels. While still hot, sprinkle the Asian chili spice blend over the fries to taste.

Make the Scallion Mayo
In a small bowl, mix together the mayonnaise and chopped scallions until well combined. Set aside.

Make the Kimchee Ketchup
In another small bowl, combine the ketchup and chopped kimchee. Stir until evenly mixed. Set aside.

Serve
Plate the fries and serve them hot with scallion mayo and kimchee ketchup on the side.
