Cooking Instructions

  1. 1

    Prepare the Hominy

Soak the dried hominy in water overnight. Drain and rinse before cooking.

  2. 2

    Sauté Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another 1-2 minutes.

  3. 3

    Add Tomatoes and Broth

Add the diced tomatoes to the pot and cook for 5 more minutes, allowing them to soften. Pour in the vegetable broth and bring to a simmer.

  4. 4

    Incorporate Hominy

Add the soaked hominy to the pot. Simmer for about 30-40 minutes, until the hominy is tender.

  5. 5

    Season the Stew

Stir in the chopped cilantro, scallions, pickled jalapeños, salt, and black pepper. Adjust seasoning to taste.

  6. 6

    Serve

Ladle the pozolé into bowls and top with crumbled goat cheese. Enjoy hot!
