Prepare the Cauliflower
In a large bowl, combine rice flour, cornstarch, garam masala, turmeric powder, red chili powder, and salt. Gradually add water and mix until you have a smooth batter. Toss the cauliflower florets in the batter until evenly coated.

Fry the Cauliflower
Heat oil in a deep frying pan over medium heat. Once hot, carefully add the battered cauliflower florets in batches, frying until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.

Make the Tamarind Glaze
In a small saucepan, combine tamarind paste, brown sugar, and 2 tablespoons of water. Cook over low heat until the sugar dissolves and the mixture thickens slightly, about 3-4 minutes. Set aside.
