    Preparation

    In a large bowl, combine the buttermilk, salt, black pepper, paprika, garlic powder, and onion powder. Add the chicken pieces and let them marinate for at least 1 hour (or overnight for best results).

    Coating

    In another bowl, mix the all-purpose flour and cornstarch. Remove the marinated chicken from the buttermilk, letting excess drip off, then dredge each piece in the flour mixture until thoroughly coated. Shake off any excess flour.

    Frying

    Heat the vegetable oil in a large skillet or deep fryer over medium-high heat. Once hot, carefully add the chicken pieces in batches, making sure not to overcrowd the pan. Fry for about 12-15 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 75°C / 165°F).

    Korean Style Sauce (optional)

    For the Korean style, in a small saucepan, combine gochujang, brown sugar, ginger, and a splash of water. Heat over medium heat until the sugar dissolves. Toss the fried chicken in this sauce before serving.

    Serving

    Remove the fried chicken from the oil and place on a paper towel-lined plate to drain excess oil. Serve hot, with Korean sauce drizzled on top if using.
