Method
Preparing the Ahi Tuna
Prepare the Tuna
Take the sushi grade Ahi Tuna steaks and pat them dry with a paper towel to remove excess moisture.
Season the Tuna
In a small bowl, mix the black pepper and sea salt together. Rub the mixture evenly over both sides of the tuna steaks.
Coat with Sesame Seeds
Spread the sesame seeds on a plate and press each seasoned tuna steak into the seeds until both sides are well-coated.
Heat the Oil
In a large skillet, heat the olive oil over medium-high heat until it is hot but not smoking.
Sear the Tuna
Carefully place the coated tuna steaks in the hot skillet. Sear for about 1-2 minutes on each side for rare, or until desired doneness is achieved.
Rest the Tuna
Once seared, remove the tuna from the skillet and let it rest for a couple of minutes before slicing.
