Directions

1

Prepare the Marinade

In a bowl, mix the ponzu sauce, grated ginger, lemon oil, salt, and black pepper to create a marinade.

2

Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and marinate in the refrigerator for at least 30 minutes.

3

Cook the Jasmine Rice

In a medium saucepan, combine the jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed. Fluff with a fork and set aside.

4

Prepare the Avocado Aioli

In a blender, combine the avocado, mayonnaise, lemon juice, and fresh basil. Blend until smooth and creamy. Season with salt to taste.

5

Cook the Salmon

Preheat a grill or skillet over medium-high heat. Remove the salmon from the marinade and cook for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

6

Assemble the Bowl

In serving bowls, layer the cooked jasmine rice, baby kale, edamame, cucumbers, radishes, grape tomatoes, and scallions. Top with the cooked salmon and drizzle with the basil avocado aioli. Finish with a sprinkle of crispy shallots.
