Prepare the Prime Rib

Season the prime rib with salt and black pepper. Preheat your oven to 300°F (150°C).

Roast the Prime Rib

Place the seasoned prime rib in a roasting pan and cook in the preheated oven for approximately 2 hours or until the internal temperature reaches 130°F (54°C) for medium-rare. Remove from the oven and let rest for 20 minutes before slicing thinly.

Make the Rosemary Au Jus

In a saucepan, heat olive oil over medium heat. Add chopped rosemary and sauté for 1 minute until fragrant. Pour in beef broth and simmer for 10 minutes. Strain the mixture to remove the rosemary bits and keep warm.

Prepare the Hoagie Rolls

Slice the brioche hoagie rolls in half. Lightly toast them in a toaster or under a broiler until golden brown.

Assemble the Sandwich

Layer the sliced prime rib on the bottom half of each toasted brioche hoagie. Top with Swiss cheese and a generous amount of horseradish sauce. Close the hoagies with the top halves.

Serve with Au Jus

Serve the sandwiches warm with the rosemary au jus on the side for dipping. Accompany with French fries.
