Sauté Vegetables

In a large skillet, melt 4 tablespoons of butter over medium heat. Add the chopped onion, diced carrots, and sliced mushrooms. Sauté for about 5-7 minutes until the vegetables are softened.

Make the Sauce

Sprinkle 1/3 cup of all-purpose flour over the sautéed vegetables and stir well to coat. Cook for an additional 1-2 minutes to remove the raw flour taste.

Add Liquid

Gradually whisk in 1.5 cups of chicken broth and 0.5 cups of milk. Continue to stir until the mixture thickens, about 5 minutes.

Combine Ingredients

Add the shredded cooked chicken, frozen peas, salt, black pepper, and dried thyme to the sauce. Stir until well combined and heated through. Remove from heat and set aside.

Prepare Puff Pastry

Preheat your oven to 425°F (220°C). Unroll the puff pastry sheets on a lightly floured surface and cut them to fit your baking dish.

Assemble the Pie

Pour the chicken filling into a pie dish. Place the puff pastry over the filling, sealing the edges. Cut slits in the top to allow steam to escape.

Egg Wash

Brush the top of the pastry with the beaten egg for a golden finish.

Bake

Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and puffed. Let it cool for a few minutes before serving.
